Picnic Time!

With Memorial Day right around the corner, I’m sure plenty of you guys have cookouts coming up, right?!  What if I gave you a clean eating, fix approved, filled with flavor menu for your next cookout whether it’s indoor or outdoor?!  You will not be disappointed!!

Prep Time: 5 minutes, Cooking Time: 12 minutes

Makes 2 servings

Ingredients:

  • Garlic powder
  • Onion powder
  • Sea salt
  • Black pepper
  • 2 lean ground meat burgers
  • 2 slices of turkey bacon
  • 2 cups spinach
  • 2 cups cherry tomatoes
  • 1/4 cup feta cheese
  • 2 ears of corn
  • Extra virgin olive oil (2 teaspoons)
  • Balsamic vinegar

Instructions:

Sprinkle some onion powder, garlic powder, sea salt and black pepper on both sides of the burger and set it aside while your grill heats up.

In the meantime, all the veggies can be measured and placed in a bowl.

I then placed the burgers on the grill for a total of 12 minutes (6 minutes on each side)

I also cooked my turkey bacon at this time as well (approx 10 minutes total)

Time to assemble it all and MANGIA!!

(I added some tomatoes from the salad to my burger, but you don’t have to!)

Hamburger Pizza

Prep Time: 15 minutes, Cooking Time: 10 minutes

Ingredients:

  • 2 whole wheat pitas
  • Plain tomato sauce
  • Pizza cheese
  • Parmesan cheese
  • Oregano
  • Garlic powder
  • Onion powder
  • Mushrooms
  • Lean ground meat

Instructions:

Preheat oven to 450 degrees

Drizzle 2 tsps of EVOO on bottom of a pan (FYI ceramic works so great!!!) Brown approx 4 cups of lean ground meat, season as you would like.  

Once the meat is brown, you can add the 2 cups of mushrooms.  Once the mushrooms are done, we are ready to assemble our pizza!!

Place 2 pitas on a cookie sheet.

Place 2 TBSPs of sauce on each pita.

 

Equally distribute the cheese among the pitas.


Place the seasonings on top.

Place one red container of the meat mixture onto each pizza.

Bake in the oven for 12 minutes and dinner is served! ENJOY!

TIP..add a little bit of sauce to meat mixture!

Also, any leftovers we had, we made a pasta bake the next night..so quick, so easy and so good!!

Shrimp, Veggies and Goat Cheese Pasta Toss

Prep time: 10 minutes, Cooking time: 10 minutes

Ingredients:

  • 1 cup of whole grain rotini
  • 1, 6oz piece of wild caught salmon
  • 1 teaspoon extra virgin olive oil
  • Cherry tomatoes
  • Zucchini (approx 2 cups of veggies total)
  • Minced garlic cloves (approx 1/4 tsp)
  • Lemon juice
  • Crumbled goat cheese (2 tbsp)
  • Garlic powder
  • Onion powder
  • Sea salt
  • Black pepper

Instructions:

Cook the whole grain rotini according to the package directions.

While the pasta is cooking, heat the EVOO over medium heat.

We decided to grill our salmon, but it can be cooked on the stove or in the oven.  We cooked each side of our salmon for approx 4 minutes. (We seasoned our salmon with garlic powder, onion powder, sea salt and black pepper)

Add the zucchini and sauté for 3 minutes.

Add the tomatoes, minced garlic and sauté for 1 more minute.

Squirt the lemon juice over mixture.

Drain the pasta and add to skillet, top with crumbled cheese.
