Clean Eating Italian Potato Salad

The time I most dread during the year is here (and almost gone😊), tax season!  It’s very longs days, so food choices are not always ideal unless you prep ahead like we do in this household!  This is a very simple, very easy and very tasteful potato salad that can be paired with any protein of your choice for a quick tax season dinner!

Ingredients (this is based on 8 servings):

  • 8 cups of cucumbers
  • 4 cups of sliced peppers
  • 4 cups celery (12 stalks total)
  • 4 medium potatoes
  • 4 hard boiled eggs
  • 1 cup feta cheese
  • Sea salt
  • Black pepper
  • Extra virgin olive oil
  • Apple cider vinegar

Instructions:

Bring a large pot of salted water to a boil. Add potatoes and cook until tender but still firm, about 15 minutes. Drain, cool and chop.

We always have hard boiled eggs on hand, so those are ready to go as well!

Next the veggies can be chopped and placed into small containers (we used leftover Chinese takeout containers, they ALWAYS come in handy!!)

First up, place 1 cup of cukes in each container.

  

Then add 1/2 cup sliced peppers to the mixture.

 
Then a 1/2 cup of celery can be added to the mixture.

  

Top with your favorite seasonings, I am more of a plain Jane type of girl with my potato salad so I opted to only salt and pepper mine.

 
Next, place 1/2 hard boiled egg in each mixture.

  
Cut the potato into chucks, dividing (1) potato between 2 mixtures.

  
Drizzle as much vinegar as you would like over whole mixture, then add 1 tsp EVOO.  (Be sure to cover potatoes or they will brown!)

  
The last and best part, add 1/8 cup of feta cheese to mixture.

  
Place in fridge and take out each night for dinner, I always add a little more salt, pepper and vinegar each night we ate it and it was perfect!  A quick, easy side dish that doesn’t take too long at all to prepare, would be perfect for any summer cookouts you have planned this summer as well!
