I was craving sloppy joes in the worst way the other night, but had no buns in the house so what do I do?! You make sloppy joes anyway and throw over some brown rice!! This is probably one of my new favorite recipes which will for sure be added to the weekly dinner mix, next time I may make some variations, but I thought this way was pretty darn good!
Prep Time: 5 minutes, Cooking Time: 30 minutes
Makes 2 servings
- Lean ground meat (I used 3 red containers)
- 1 cup brown rice
- 4 medium sized tomatoes
- 1 green bell pepper
- Handful of mushrooms
- Extra virgin coconut oil
- Sea salt
- Black pepper
- Onion powder
- Garlic powder
- Shredded cheddar cheese
Cook your brown rice according to the package.
While that is cooking, place 1 tsp of EVCO on bottom of pan and turn heat to medium high. Cut the tomatoes and peppers and place in pan (sprinkle your favorite seasonings on top), sauté for approx 5 minutes
Move the veggies to the one side and throw the meat on the other side to brown (sprinkle your favorite seasonings on top as well).
Once the meat is all brown, mix everything together and sprinkle some minced garlic and parsley over everything,
Add the mushrooms and reduce heat to low.
Once the rice is just about done, mix in one blue container of the shredded cheddar cheese and let it melt away!
Measure out 2 yellows of rice, placing one on each plate.
Evenly distribute the sloppy joe mixture between the 2 plates and dinner is served..ENJOY!!!
