Baked Tilapia with Tomatoes and Feta

Prep time: 5 minutes, Cooking time: 17 minutes

Serves: 2

Ingredients:

  • Extra virgin olive oil
  • Onion powder
  • Garlic powder
  • Parsley
  • Oregano
  • 3 tilapia filets
  • 5 roma tomatoes
  • 1/2 cup feta cheese
  • Parmesan cheese
  • Barley (optional)

Instructions:

Preheat oven to 425 degrees.

Drizzle EVOO on bottom of baking dish.  Place 3 tilapia filets on the bottom, layer half of the tomatoes and sprinkle some garlic powder, onion powder, parsley and oregano

Place the feta on top

Place another layer of tomatoes on top.  Sprinkle the onion powder, garlic powder, parsley and oregano on top.  Sprinkle some Parmesan cheese.

Bake in the oven for 17 minutes.  Pair with your favorite side.  We chose barley, it paired so well!  ENJOY!!

Pumpkin Oatmeal Raisin Cookies

Ingredients:

  • 1 cup old fashioned rolled oats
  • 1 teaspoon pumpkin pie spice
  • 1/4 teaspoon sea salt
  • 1 medium ripe banana smashed
  • 1/2 cup pumpkin, canned
  • 1/4 cup raisins
  • 1/4 cup almonds, chopped in food processor

Instructions:

Preheat oven to 350 degrees.

Spray cookie sheet with non stick cooking spray.

Combine oats, pumpkin pie spice and sea salt in small bowl, mix well.

In separate bowl, mash the banana and combine with pumpkin, raisins and almonds.  Mix ingredients well.


Drop a tablespoon full onto the cookie sheet.

Bake in the oven for 17 minutes.

With this recipe, I was able to get 18 cookies.  Two of these cookies are equal to (1) yellow containers not the 21 day fix program.

Spinach Pizza

Prep Time: 5 minutes, Cooking Time: 12 minutes

Makes 4 servings

Ingredients:

  • 4 whole wheat pitas
  • Extra virgin olive oil
  • Minced garlic
  • 1/4 cup mozzarella cheese
  • 1/4 cup feta cheese
  • Handful of spinach
  • 1/2 plum tomato
  • 3 slices of onion
  • Parmesan cheese

Instructions:

Preheat oven to 400 degrees

Place 1 tsp of EVOO on pita and sprinkle some minced garlic on top of it.  Equally distribute the feta cheese and mozzarella among the pitas.

Place two slices of tomato, approx 5 pieces of spinach and a few slices of onion on each pita.  Sprinkle parm cheese on top.

Bake in the oven for 12 minutes and dinner is served!  ENJOY!
