Lemon Feta Grilled Chicken Salad

Hello Labor Day Weekend!!  We decided to paint our living room, 2 stairwells and walls leading to the bedrooms this weekend (mostly our whole house lol), so food choices are not always ideal when your on the go all day, BUT we planned ahead and grilled a bunch a chicken breasts the other night so we would be set for success this weekend!  I made this for dinner one night last week and thought it would be great for when we are painting the house!  It is so simple; yet very flavorful, ENJOY!!

Prep Time: 5 minutes

Makes 2 servings

Ingredients:

  • 2, 6oz chicken breasts
  • 2 cups spinach
  • 1 cup cucumbers
  • 1 cup tomatoes
  • 1/2 cup feta cheese
  • 2 tablespoons of fresh lemon juice
  • Extra virgin olive oil
  • Sea salt
  • Black pepper
  • 2 slices of whole grain bread
  • Natural peanut butter

Instructions:

Since the chicken is already cooked and ready to go, we are ready to assemble!  At this time, I take out 2 slices of wg bread to defrost and set it aside.

On each plate, place 1 cup spinach, 1/2 cup cucumbers, 1/2 cup tomatoes, 1/4 cup feta cheese and 1 chicken breast on the plate.  Put a dash of sea salt and pepper on the top.  Drizzle 1 tablespoon of fresh lemon juice and 1 teaspoon EVOO on top of the salad, you can add more lemon juice if you would like, but I thought it was perfect!

After we finish our salad, we will have our wg bread with 1 tsp of natural peanut butter as our “dessert”!

  

Dinner is served just like that and we are refueled for some more painting!
